Our beef comes from grass fed Highland cattle which spend some of their life grazing on Woodys Farm and some on the neighbouring Southfields Farm in Manakau. It is dry aged for a minimum of 21 days before being packaged and sent to you. This ageing process improves flavour and tenderness.
Highland beef has a higher marbling content and this gives the meat extra tenderness and tastiness. Studies in the US have intact verified that highland beef is 38% lower in fat content overall and 4% lower in cholesterol that steaks from the local supermarket.
Thick cut bone in Tomahawk steaks. The Tomahawk Steak is an on-the bone Rib Steak, cut from the Fore-rib with the entire rib bone left. The long bone is french-trimmed, leaving an amazing presentation, and dinner table discussion point. As it is bone-in Rib Steak, it has quite a large amount of inter-muscular fat, which gives it a load of flavour when cooked, as flavours are released from both the huge bone, and inter-muscular fat during roasting to give a sweet gelatinous flavour.
