Gammon is a smoked leg steak much the same as a rump steak but with the flavour of bacon. Normally pan fried until golden and still juicy inside, this steak could be served with salad, chips or boiled potatoes and cabbage. Also referred to as Kassler in Europe.
Our sliced champagne ham is thick cut and Manuka smoked. Ham is traditionally from the leg and is naturally lean however we do leave the fat on for flavour. Best served on crusty bread with a splash of mustard.
Our bacon is cured in a traditional brine ensuring the meat stays moist during smoking. Unlike mass produced bacon we do not pump water into the meat and therefore you can be assured that the bacon will not shrink very much during cooking.
Back bacon comes from the loin of the pig and is a very high quality cut. Back bacon is perfect for a bacon butty, full english or just a snack.
Streaky bacon comes from the belly of the pig and is a fattier cut of meat which ensures the bacon crisps up during cooking. Streaky bacon is perfect as an ingredient in meals such as pasta or added to chicken to give an extra level of flavouring.
Middle bacon is a combination of both back and streaky and is rolled for smoking. Its the best of both worlds and tends to be from leaner pigs.
We do not trim the fat or skin from the bacon and we recommend that to ensure the flavour is retained during cooking you do not trim the bacon until after cooking, if at all.
All our bacons and hams are Gluten Free and contain a small amount of preservative (0.3%) to ensure our rare breed meat arrives at your home in perfect condition.
