Gammon is a smoked leg steak much the same as a rump steak but with the flavour of bacon. Normally pan fried until golden and still juicy inside, this steak could be served with salad, chips or boiled potatoes and cabbage. Also referred to as Kassler in Europe.
Free range pork chops have a meatier taste and texture than intensively reared pork. Simply throw them on the BBQ or marinate and cook with pears in the oven for a sweet and savoury combination.
Pork Belly is the ultimate extravagance. Being the fattiest part of the pig it is also the most tasty. Cooked to have a crispy crackling skin this cut can either be served in bite size pieces for a starter or as a main meal.
Pork Schnitzel is a thin slice of juicy, tasty and exceptionally lean free range pork leg. It can be breaded, pan fried or just sliced up for stir fry.
Rump steak comes from a leg cut, and is lean and tasty. Perfect for the BBQ or chopped up for stews and casseroles. Cook medium rare.
