The latest craze from San Francisco is Millionaires Bacon. Whilst our millionaire's bacon can be cooked and eaten like normal bacon the ultimate way to cook this bacon is covered in sugar and cayenne pepper before being left in the oven to cook for a few hours at a low temperature.
Our Millionaires Bacon is made from the whole Scotch muscle (same muscle used to make Coppa). This muscle has a large amount of intramuscular fat which keeps it moist during cooking and the lack of rind means the bacon will not curl.
The bacon is thick cut (4mm) and cured with lashings of local Manuka Honey from Kapiti before being rubbed with a secret spiced chilli mix. Left for three days before being Manuka smoked. This bacon has a sweet flavour and a subtle chilli kick.
