We have been producing free range dry cured scotch bacon without added nitrites for our restaurant customer for a year and we are now making it available online to our customers. Cured with sea salt, brown sugar and sage (a natural preservative) this bacon is how bacon used to be.
Our Nitrite Free Scotch Bacon is made from the whole Scotch muscle (same muscle used to make Coppa). This muscle has a large amount of intramuscular fat which keeps it moist during cooking and the lack of rind means the bacon will not curl. Its perfect shape and size for a burger or sandwich.
Please note that as a result of no added preservatives nitrate free bacon looks brown rather than pink.
