This extraordinary beef is sourced from the Robinson family, fifth-generation sheep and beef farmers in the picturesque Horowhenua region of New Zealand. Blair and Anna Robinson raise their Black Angus cattle on the 2200-acre hill country farm known as Te Rohenga, nestled beneath the majestic Tararua Ranges.
At 12 months of age, the cattle are carefully transported to the lush grasslands of Roselawn and Pencoed Farms in Marton, located in the scenic Rangitikei region. There, they graze freely, developing the rich, natural flavours that make this beef so special.
Unlike our standard aging process of 21 days, this special release has been dry-aged for an exceptional 80+ days. This longer aging period deepens the flavour profile, delivering a bold, intensely rich taste with remarkable tenderness.
