BACK BACON: Made from the middle eye loin this bacon is dry cured and is a very high quality cut. We do not trim the fat from the bacon and we recommend that you do not trim the bacon until after cooking, if at all. This bacon will not shrink during cooking. Min weight 250g.
CHILLI BACK BACON: Marinated in a chilli salt brine for three days before being Manuka smoked. This bacon has a subtle chilli kick. Min weight 220g
