Guanciale is a bacon made from the cheeks. A pork jowl cured with salt, sugar, and spices. This is the traditional ingredient for Spaghetti carbonara as it has much more flavour that bacon alone.
During production we wash it in cognac, roll in Herbes de Provence and gently smoke. Its flavour is stronger than other pork products, such as pancetta and its texture is more delicate.
Guanciale can be sliced thinly and eaten raw. It can also be cooked like bacon or chopped as an ingredient giving great depth of flavour to the dishes and sauces it is used in.
