Our Biltong is air dried beef made from a singular muscle and aged for at least two months, it comes from Highland Beef cattle grazed on our neighbours farm in the Horowhenua. We cure our Biltong in a vinegar herb cure and hang to dry. Biltong is sliced and traditionally eaten as a snack.
