Guanciale is a form of bacon made from pork jowls (cheek) and cured with salt, sugar, and spices. This is the traditional ingredient for Spaghetti Carbonara as it has much more flavour that bacon alone.

During production we rest in brine, roll in black pepper and herbs and gently smoked. Its flavour is stronger than other pork products, such as pancetta and its texture is more delicate.

Guanciale can be sliced thinly and eaten raw. It can also be cooked like bacon or chopped as an ingredient giving great depth of flavour to the dishes and sauces it is used in.
